Traditional desserts, like homemade brownies or apple bars, that have been passed down from family members are so special. And this Carrot pudding is no different, passed down to me from my mother in law. It also happens to be very similar to a pudding that my own mom used to make. I love how simple it is to make and how absolutely moist and delicious it is!

A Christmas pudding is generally a combination of dried fruits and sometimes nuts, eggs or molasses, spices such as cinnamon and nutmeg, with flour and lard or butter. The pudding is steamed for hours and usually served with some kind of topping.

Years ago, folks created recipes from the ingredients that they had on hand and were affordable. So it made perfect sense to use root vegetables harvested and stored away combined with simple staples like flour and spices. In early recipes, suet replaced butter, which makes me extra thankful that butter is plentiful today!

I think the history of a Christmas pudding is what really draws me to including it in my own Christmas traditions. I love the fact that this simple dessert, that has stood the test of time, is still enjoyed today.

How To Make Carrot Pudding

Making carrot pudding could not be easier!

  • Prepare a small bowl that has a lip, with butter. Cut a small circle of parchment to line just the bottom of the bowl.
  • Prepare and set aside all ingredients. Shred the carrots and potatoes. Sprinkle the potato with baking soda and set aside.
  • Cream together the butter and sugar, then add the currants, raisins, grated carrot and potato. Mix.
  • Add the flour and spices and stir only till just combined.
  • Fold into prepared dish and place in steamer for 3 hours. Learning how to steam a pudding is easy, just follow these easy instructions!
  • Remove and immediately turn upside down to remove the pudding from the bowl.

PRO TIP: If you have allowed your pudding to sit a bit too long and find it hard to turn out of the bowl, place it in a pan of hot water for about 5-10 minutes. This will soften the edges enough to turn out easily when flipped upside down.

Christmas Carrot Pudding is delicious on its own, but even more indulgent with a caramel or bourbon sauce. Whipped cream or ice cream are delicious toppings as well! Add chopped nuts or coconut flakes for a festive flair.

This dessert freezes wonderfully, so it’s the perfect choice for this busy time of year. After the pudding is cooled, cover with foil, then in plastic wrap and place in the freezer.

Thaw completely, and re-steam (if desired) before serving. Or alternately you can leave the tin foil on and reheat in a low heat oven just to warm. If you have an instant pot, it works wonderfully to re-heat this carrot pudding using the warm function.

FAQs

Is it better to boil or steam Christmas pudding? ›

Steam in a steamer – or a saucepan with a saucer, or the lid of a jar, in the bottom – for 4 hours, checking the water level regularly. Store in a cool place until Christmas Day, feeding occasionally with alcohol if you like your puddings boozy.

Why do you steam Christmas pudding twice? ›

Our answer

Ideally we would suggest that when the pudding is made it is steamed for 8 hours (the combined time of the first and second steamings) as the steaming is important for the flavour of the pudding. The pudding can then be microwaved to reheat it on Christmas Day.

Is there an alternative to steaming a Christmas pudding? ›

Aside from the traditional method in a saucepan, there are lots of ways to steam a pudding. You can use a pressure cooker, microwave or bake in the oven in a water bath.

Why do Christmas puddings take so long to steam? ›

A Christmas pudding is quite a dense mixture and needs long gentle cooking to prevent the outside burning before the inside is cooked. The same theory holds for reheating a pudding as it will take some time for the pudding to heat right through to the centre.

Why can't you reheat Christmas pudding? ›

Steaming is the best way to reheat Christmas Pudding. Microwaved puddings are frequently ruined. They tend to overheat and get tough & sticky. Steaming lightens the pudding and after taking so much care to make your own pudding it's such a shame to not steam it.

Why is my steamed pudding soggy? ›

Steamed puddings need to be properly sealed before cooking to prevent them from going soggy. This is possible even if you don't have a special pudding dish with a dedicated lid. -Lay a sheet of aluminium foil over a sheet of greaseproof paper (these need to be large enough to wrap generously around the pudding bowl).

Do you put a lid on the saucepan when steaming a Christmas pudding? ›

As long as there is a gentle simmer and steam is being created in your pan then your water is hot enough to cook your pudding. Resist lifting the lid of the steaming pan for the first 30 minutes; like baking a cake, the drop in temperature could cause the pudding to collapse.

How to tell if steamed Christmas pudding is cooked? ›

To test if the pudding's cooked, pierce the foil and paper with a skewer and wiggle it to make the hole bigger, or it will be wiped clean of any mixture when you pull it out.

Why do people put pennies in Christmas pudding? ›

Finding a Christmas coin in your slice of pudding is believed to bring good luck and especially wealth in the coming year. This lovely tradition may date back as early as the 1300s when a dried pea or sometimes a small silver ring or crown was baked into a Twelfth Night Cake.

Can I use a Pyrex dish to steam a pudding? ›

If you have difficulties finding a pudding basin then a Pyrex bowl, or similar heatproof glass bowl, could be used.

Why did my Christmas Pudding go mouldy but? ›

For the pudding, the most likely cause of mould is moisture. If it's steamed for 8 hours, left to cool completely and then you replace the paper and foil.

Can you over steam a Christmas pudding? ›

Steaming a smaller pudding for longer is not going to spoil it. We have steamed 1lb puddings for 8 hours many times. If the foil and parchment hasn't split, again your pudding will not be spoilt. Let your pudding go completely cold then you can remove the covering and put on new parchment and foil ready for the day.

How do you wrap Christmas pudding before steaming? ›

Tie the foil tightly around the bowl using a long piece of string. Trim away excess foil and greaseproof paper. Leave about two inches or 10 cm of foil and paper around the sides of the bowl. Tuck the paper in and fold the foil around it to totally encase the paper and give the pudding a water-tight seal.

Is it better to steam or microwave Christmas pudding? ›

Steaming is the best way to re-heat a homemade pudding and the only way we recommend re-heating Delia's Christmas pudding. Microwaved puddings are frequently ruined. They tend to overheat and get tough & sticky.

How do you keep Christmas pudding moist? ›

After you have steamed and cooled your pudding, replace the foil with a freshly buttered piece to keep it moist and store in a cool, dark place, or the fridge, until you are ready to reheat it on Christmas day.

How do you heat Christmas pudding at home? ›

Reheating Christmas Puddings

Wrap in foil and reheat at 300ºF (150ºC) for an hour or until hot. To reheat on the stovetop, remove wrappings and place the pudding in the original mould. Cover tightly. Set pudding mould on a trivet in a large saucepan and steam 3/4 - 1 hour or until hot.

Can you steam a Christmas pudding in a glass bowl? ›

The large pudding fills a 1.7 litre/3 pint/1 1/2-quart pudding basin. Nigella suggests using a plastic pudding basin with a clip-on lid as these are easy to use and not too expensive. If you have difficulties finding a pudding basin then a Pyrex bowl, or similar heatproof glass bowl, could be used.
