6 cups milk
3/4 cup sugar
3/4 cup tapioca (small or large pearl)
1 egg
2 teaspoons vanilla extract

Set the crock pot to high heat. Add the milk and sugar and stir until the sugar has dissolved.

Add the tapioca and mix well. Cover the crock pot and cook on high heat for about 2 hours or until the tapioca is tender. Large pearl tapioca may take longer to cook. The tapioca pearls will be translucent when cooked.

When the tapioca is cooked, beat the egg and vanilla in a small bowl with a whisk. Add 1 cup of the hot tapioca to the eggs and stir quickly to combine. Add that mixture back to the crock pot and mix well.

Cover the crock pot again and cook the tapioca for another 20 minutes or until thickened.

Transfer the tapioca to a serving bowl or individual serving dishes. Place the tapioca in the refrigerator and chill for 2-3 hours.

    Worked some trial and error with this recipe using Minute Tapioca and it does work!! You just throw all the ingredients together at the beginning and turn it on high for 1 hour and 30 Minutes. Today I’m adding a cinnamon stick :)

    I had this Saturday night and was very surprised that the Gal made this in a crockpot!!! Wow where have I been all this time? I always followed the box recipe but this is way easier then the box...just takes more time to make but while you are making it you can do most anything else like shop or fix the rest of the meal!

    This is absolutely the easiest way to make tapioca! I generally do not plan tapioca in advance (so I do not have the pearls soaked overnight). This recipe is perfect, and as long as I have a 4-hr window, we're good to go! I use large pearl, so it does usually take the extra hour. Thank you!

    My husband loves tapioca pudding so I frequently purchase it from the deli or have made the instant stuff which is not nearly as good as this ---- it was so EASY and turned out wonderful. I will be able to make 3 times as much from one bag of pearls than what I paid to purchase from the deli - everyone should give it a try. thanks - I love this recipe!
