"If you are watching your carbs and craving pancakes, here is a breakfast you will like.To obtain almond meal, put some almonds in your food processor and pulse them until they are the consistency of cornmeal. Be careful if you over-pulse, you will obtain almond butter :)."

- 1 cup almond meal or 1 cup almond flour
- 2 eggs
- 1⁄4 cup sparkling water (you can use flavored)
- 2 tablespoons oil
- 1⁄4 teaspoon salt
- 2 (1 g) packets Splenda sugar substitute

directions
- Mix all ingredients together.
- Cook the batter as you would pancakes, be careful not to burn them as you might not get the regular bubbles.
- Serve them with sugar-free syrup.

Do you need the 2 tablespoons of oil in the recipe? It bumped the calorie total up by over 200 cals which was frustrating. Thank you

I'm obsessed with these pancakes . Seriously . I am a recovering carb addict . These pancakes keep my keto diet in check while satisfying the craving for pancakes I have ALL THE TIME . I use almond meal flour by Bob's Red Mill so these are very quick to mix and cook. I use almond milk whipping cream or water instead of sparkling water. I have also made them without sweetener Bc the syrup gives enough added sweetness for me . Thank you for this recipe ! I was looking for a pancake alternative and the options out there just weren't good :)

I substituted half water and heavy whipping cream for the sparkling water since I didn't have any. These are amazing and I have made them almost everyday for a week now. Thank you. This is such a simple recipe I can honestly have it thrown together in the same time it would take me to make something from a box. My son ate one and exclaimed it tastes just like the cream puffs I buy him at the store. If he likes it, I know it's a winner. Thank you for sharing.

Not sure why I'm the only one who doesn't like these pancakes. They are grainy and heavy, it was like eating cornbread batter. They looked good. Fortunately I added blueberries which may have saved them. I couldn't finish them.

Excellent recipe...added some flax seed meal and baking powder to add more puff...taste so good!

It was not pretty (first batch) but it was very good. Easy to make and limited ingredients . Thats a good thing. I used diet Tonic Water and added big plump blueberry's . Cannot wait to Make them again

I add a splash of vanilla extract. And use only super fine almond flour(makes a huge difference). Also if you add some sugar free choco chip cookies you really don’t need the added sweetener. Drizzle with sugar free syrup (I love LogCabin).

I didn't have sparkling water so I used water; subsistuted 1/4 cup of Almond flour with coconut flour; added 1/2 tsp baking powder. Variations: 1. Added blueberries to batter (good); 2. Added chopped apple and cinnamon (good). 3. Added chopped/chunked Quest rocky road bar (AWESOME! - choc brownie bar would be good too)

I'm not a fan of almond flour at all but it was very good in these pancakes. No sparkling water here either so I used the heavy whipping cream instead. Don't get me wrong because they're not like regular pancakes but they are close. For those of us on low-carb diets for a while, we have forgotten how flour tastes in recipes like this anyway. It really was a real treat and I rate this recipe excellent.
