There is no better way to start the day than with these Fluffy Thermomix Pancakes! We make these on a weekly basis in our house, they are really that good!
For an easy yet delicious breakfast, these fluffy Thermomix Pancakes really are the best! They are thick, fluffy and soak up a generous amount of maple syrup perfectly - what more could you ask for?!
Pancake Ingredients
To make these fluffy pancakes, you will need:
- Plain Flour - also know as 'all purpose' flour
- Baking powder
- Caster Sugar
- Milk
- Eggs
- Butter
Can these Pancakes be make Gluten Free?
They sure can, simply use your favourite gluten free flour and baking powder - or you can use gluten free self-raising flour in it's place.
Tips for Fluffy Pancakes every time!
- For the FLUFFIEST pancakes, let the pancake batter rest for 15 - 20 minutes before cooking. This step is not essential, but it's certainly worth it!
- Select a medium/low temperature on your stove. As these pancakes rise, you want to cook over a low heat to ensure they cook evenly throughout.
- Don't over mix the batter!
- Add a little butter/oil between cooking each pancake.
- For best results, I like to use ghee or unsalted butter to grease my frying pan.
- You can freeze these pancakes.

How to serve:
In our house we like to top stacks of pancakes with Maple Syrup and berries. However you might also like these Pancake Toppings:

Fluffy Thermomix Pancakes Recipe

Ingredients
- 30 grams butter
- 225 grams plain flour
- 1 tablespoon baking powder
- 1 teaspoon caster sugar optional
- 2 eggs
- 280 grams milk
To grease the frying pan
- ghee/coconut oil/butter your choice
Instructions
Place the butter into your Thermomix bowl and cook for 2 minutes, 60 degrees, speed 2 to melt.
Add the plain flour, baking powder, caster sugar, eggs and milk to the Thermomix bowl and mix for 10 seconds on speed 4. Scrape down the sides and mix for a further 10 seconds on speed 4 to combine.
Let the pancake mixture sit for 20 or so minutes - if you can.
Preheat a large non stick frying pan over a medium high heat and add a little of the extra butter to coat the pan.
Pour the pancake mixture into the pan to create 2 pancakes and cook for approximately 2 minutes or until bubbles begin to form. Flip the pancake and cook for a further one minute.
Transfer the cooked pancakes to a plate (or thermoserver to keep warm) and repeat until you have used all of the mixture.
Notes
- For the FLUFFIEST pancakes, let the pancake batter rest for 10/15 minutes before cooking. This step is not essential, but it's worth it!

- Don't overmix!
- Add a little oil between cooking each pancake.
- For best results, I like to use ghee or a unsalted butter to grease my frying pan.

Thanks for this great recipe! We are vegan in this house so substituted vegan butter, dairy milk for almond, added raw sugar (because I was too lazy to mill!), and used a banana instead of the egg. Delicious! Will definitely be adding these to school lunches too! 🙂Reply

These were amazing. Although I didn’t have plain flour so used SR and left out the baking powder. I also used the buttermilk I’d produced from making the butter (?) but they were fluffy and received rave reviews. Thank you!

Hi, I'm planning on making these sometime soon, and I'm just wondering, do we have to use castor sugar? It's just a bit hard to find. So will it affect the result if I replace it with normal sugar?

Hi Ana, you can leave the caster sugar out but you will find the pancakes won't be quite as sweet 🙂

Hi Ana, your mill feature on your themomix can help you here, put your normal sugar inthe bowl by itself and then speed 6for a few seconds to make the sugar finer. 🙂
